colorless unsaturated aldehyde. The odor is perceived as orris (iris, tenaciously flowery, heavy and woody, used in spices and for home-made toothpastes.), fat and cucumber and is associated with aged beer and buckwheat, old books, and old people smell. It's production is increased with aging, and is generated by the oxidative degradation of omega-7 generated by the oxidative degradation of omega-7 unsaturated fatty acids, such as palmitoleic acidand vaccenic acid, found on the skin surface.
